Corn Salsa
Ingredients
2 cups of corn or 6 ears (shucked )
1 cup small-diced red onion, (about ½ of a large onion)
½ cup fresh cilantro leaves roughly chopped
2 Jalapeño peppers, finely diced &, seeds removed
2 Tbsp lime juice
3 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
Directions
Boil or grill corn until cooked. Chop red onions, jalapeños and cilantro.
Add the corn when is ready. Add lime juice, olive oil, salt and black pepper. Mix well and ready for server.
