Smoked Sweet Potato Pie
Ingredients
1¼ cup mashed sweet potatoes (smoked)
½ cup salted butter
½ cup brown sugar
1 cup condensed milk
2 large eggs
1 tsp vanilla extract
1 tbsp pumpkin pie spice
1 tbsp flour
2 Deep 9" pie crust
Directions
Smoke the sweet potatoes at 275° for 2 hrs or until fork tender.
Raise smoker temp to 350 degrees.
Place sweet potato and butter in a mixing bowl and use an electric mixer to beat until smooth. Add brown sugar, milk, eggs, vanilla extract, pumpkin pie spice, and flour. Beat until smooth.
Pour into pie crust and bake in the smoker for 50-55 minutes.
Let rest for 30 minutes before serving.
