Ingredients

Shrimp:

Vegetables:

  • 4 medium bell peppers (red, yellow, green, and orange), deseeded, cored, and sliced into ¼-inch strips

  • 1 small red onion, peeled and thinly sliced

  • Salt and pepper to taste

  • 2 tablespoons olive oil (divided for cooking)

    Toppings & Accompaniments:

  • 4 ripe avocados (for guacamole)

  • A handful of cilantro, chopped (for guacamole)

  • ½ small white onion, chopped (for guacamole)

  • Salt to taste (for guacamole)

  • Shredded cheddar cheese (for topping)

  • Lime wedges, lettuce leaves, corn tortillas, and salsa (for serving)

 

Directions

  1. In a large bowl, combine shrimp with Blaxican fajita seasoning and 1 tablespoon olive oil. Toss well to coat evenly. Set aside. 

  2. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil to the hot pan, followed by the bell peppers and red onion. Season with a pinch of salt and pepper.

    Cook, stirring frequently, until the vegetables are slightly softened and charred in spots, about 5-10 minutes. Transfer to a plate. 

  3. In the same skillet, add the remaining 1 tablespoon olive oil. Place shrimp in a single layer and cook for 2 minutes per side, or until opaque and just cooked through. 

  4. Return the cooked vegetables to the skillet with the shrimp. Stir everything together for 1 minute, then turn off the heat. 

  5. Heat your fajita pan on high for about 5 minutes, or until water droplets sizzle when added. Carefully transfer the shrimp and vegetable mixture to the sizzling pan. Be cautious as the pan will be extremely hot. 

  6. Make the guacamole: In a bowl, smash the avocados. Add chopped cilantro, white onion, and salt to taste. Mix well. 

  7. Serve the sizzling shrimp fajitas with lime wedges, lettuce leaves, warm corn tortillas, salsa, guacamole, and shredded cheddar cheese.
