Ponzucumber Salad
Ponzu is a condiment made with soy and citrus, traditionally yuzu. Make it at home quickly and then serve it with cucumbers for a refreshing side dish
Ingredients
1 lb Persian or English cucumber
2 Tbsp soy sauce
2 Tbsp citrus juice (yuzu is preferred but improbable, a mix of orange and lime is fine, or Meyer lemon)
2 Tbsp mirin
1 Tbsp rice vinegar
1 Tbsp toasted sesame oil
1 tsp toasted sesame seeds
1 green onion, sliced
Red chili flakes, to taste

Directions
Slice cucumbers. Toss with a generous portion of salt and set in a colander over a bowl and allow to sit 15 minutes, or up to overnight in the fridge. Rinse and pat dry.
Whisk together the soy, mirin, citrus, rice vinegar, sesame oil, and red chili flake. Taste and adjust.
Toss cucumber in dressing. Either serve immediately or let sit in the fridge for a few hours. Garnish with green onions and sesame seeds.
