Oven Roasted Sweet Potatoes
These roasted sweet potatoes feature the delightful flavor combination of dried basil, smoked paprika, thyme, and rosemary, perfectly complementing the natural sweetness of roasted sweet potatoes. A simple and satisfying side dish for any occasion.
Ingredients
3 to 4 large sweet potatoes, peeled and diced
1 ½ tsp salt & fresh ground black pepper
2 tbsp fresh thyme
2 tbsp fresh rosemary
1 tsp dried basil
1 tsp garlic powder
1 tsp smoked paprika
4 tbsp butter
3 to 4 avocado or olive oil
Directions
Preheat Oven: Preheat oven to 425F.
Prepare Sweet Potatoes: Spread the cubed sweet potatoes onto a baking sheet. Pour butter and olive oil over the potatoes, then add the seasonings.
Toss everything together and cover the pan with foil.
Roast: Roast the sweet potatoes covered for about 20 minutes, then remove the foil and bake for another 10 minutes. For more color, broil under high temperature for a few minutes.
