Oven Roasted Sweet Potatoes

Ingredients

  • 3 to 4 large sweet potatoes, peeled and diced

  • 1 ½ tsp salt & fresh ground black pepper

  • 2 tbsp fresh thyme

  • 2 tbsp fresh rosemary

  • 1 tsp dried basil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 4 tbsp butter

  • 3 to 4 avocado or olive oil

 

Directions

  1. Preheat Oven: Preheat oven to 425F.

  2. Prepare Sweet Potatoes: Spread the cubed sweet potatoes onto a baking sheet. Pour butter and olive oil over the potatoes, then add the seasonings.

    Toss everything together and cover the pan with foil.

  3. Roast: Roast the sweet potatoes covered for about 20 minutes, then remove the foil and bake for another 10 minutes. For more color, broil under high temperature for a few minutes.
