Mint Oreo Brookie
This Mint Oreo Brookie recipe combines chewy cookie goodness with fudgy brownie decadence, all studded with crunchy Oreo pieces and a refreshing hint of mint. Get the perfect balance of sweet, minty, and chocolatey in every bite.
Ingredients
½ cup melted butter
1 large egg
1 cup light brown sugar, packed
2 tbs brewed coffee
1 tbs vanilla
½ tsp peppermint extract
Do NOT use peppermint oil
½ cup unsweetened cocoa powder
Dutch process natural can be substituted
½ cup all purpose flour
25 mint Oreos, quartered
Directions
Preheat: Preheat oven to 350 degrees
Make Brookie Batter: In a large bowl, combine butter, egg, brown sugar, coffee and vanilla and mix by hand. Add in mint extract.
Add in cocoa powder and whisk until all lumps are gone. This may take a few minutes.
Add in flour and combine.
Add in 20 of the quartered Oreos into mix and combine. Reserve 5 for topping.
Bake: Pour into an 8x8 pan and place the remaining Oreos on top, pressing lightly to ensure they are resting in the batter.
Bake at 350 for 28-30 minutes in a metal 8x8 pan.
If using a glass pan, it may take up to 35 minutes depending on oven temps.
Allow to cool, cut and serve.
