Loaded Potato Pancakes

Let's turn these cold, mashed potatoes into these loaded mashed potato pancakes.

The first thing you need to do is fry up some bacon; and while it's cooking, dice an onion or green onions and dice your bacon. Slightly beat one egg and add it to the potatoes, your bacon bits, your green onion, and mix it like you mean it.

I added milk this time, although I usually use sour cream. Then you're going to add flour, and you put as much as you think you need, so it'll hold on the spoon like this. Then fry at about 350 degrees until they're golden brown on both sides. I did about four minutes on each side. When you first take them out, put them on a plate with a paper towel. After they drain and move over to a wire rack.
