Literally the Best Carrot Cake Ever

This recipe is an Oregon Family Cooking favorite, specifically the favorite of their oldest son

 

Ingredients

Cake

  • 1 cup granulated sugar

  • 1 cup lightly packed brown sugar

  • 1 ¼ cup vegetable oil

  • 4 eggs

  • 1 tablespoon vanilla

  • 1 tablespoon cinnamon

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 2 cups all purpose flour

  • 2 ¾ cups freshly grated carrots

  • 8oz drained crushed pineapple

  • 1 cup coconut

  • 1 cup raisins

  • 1 cup chopped walnuts

    Frosting

  • ½ cup butter

  • 8 oz cream cheese

  • 5 cups powdered sugar

  • ½ teaspoons almond extract

  • 1 cup walnuts for decorating

 

Directions

  1. Preheat oven to 350 degrees.

  2. Make the cake: Line bottoms of 2 9” cake pans & spray with cooking spray.

  3. In a large mixing bowl combine sugars, oil, eggs & vanilla, mix until well combined. Mix in cinnamon, baking powder, baking soda & flour.

  4. Add carrots, pineapple, coconut, raisins & walnuts, mix until well combined.

  5. Pour batter evenly into prepared cake pans.

  6. Bake for 40-50 minutes or until toothpick comes out clean. Remove from oven & let cool completely before frosting.

  7. Make the frosting: Add butter & cream cheese into a mixing bowl, beat until light & fluffy.

  8. Gradually add in powdered sugar & mix until smooth. Mix in almond extract.

  9. Frost cake & garnish with walnuts
