Literally the Best Carrot Cake Ever
This recipe is an Oregon Family Cooking favorite, specifically the favorite of their oldest son
Ingredients
Cake
1 cup granulated sugar
1 cup lightly packed brown sugar
1 ¼ cup vegetable oil
4 eggs
1 tablespoon vanilla
1 tablespoon cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
2 cups all purpose flour
2 ¾ cups freshly grated carrots
8oz drained crushed pineapple
1 cup coconut
1 cup raisins
1 cup chopped walnuts
Frosting
½ cup butter
8 oz cream cheese
5 cups powdered sugar
½ teaspoons almond extract
1 cup walnuts for decorating
Directions
Preheat oven to 350 degrees.
Make the cake: Line bottoms of 2 9” cake pans & spray with cooking spray.
In a large mixing bowl combine sugars, oil, eggs & vanilla, mix until well combined. Mix in cinnamon, baking powder, baking soda & flour.
Add carrots, pineapple, coconut, raisins & walnuts, mix until well combined.
Pour batter evenly into prepared cake pans.
Bake for 40-50 minutes or until toothpick comes out clean. Remove from oven & let cool completely before frosting.
Make the frosting: Add butter & cream cheese into a mixing bowl, beat until light & fluffy.
Gradually add in powdered sugar & mix until smooth. Mix in almond extract.
Frost cake & garnish with walnuts
