Leftover Turkey Soup

Use every bit of your leftover turkey from Thanksgiving! The bones make a great bone broth with your leftover turkey, veggies, and pasta
 

Ingredients

  • Leftover Turkey

  • Carcass from turkey

  • Pasta of choice

  • Leftover vegetables (carrots, celery, etc.)

  • Pasta of choice

 

Directions

  1. Using the leftover turkey and carcass, place in a large pot and cover with water. Bring to a boil, then lower to simmer for approximately an hour and a half to two hours until the meat falls off the bone. Remove the turkey carcass, chop meat and discard the bones. Strain the broth into a clean pot .

  2. Add chopped turkey and strained broth and bring to a boil. Add pasta of choice, Add left over veggies, cook until pasta is al dente, and vegetables are warmed through….. taste it then season to taste.

    This is a great way to use up any mixed vegetable left-overs (celery and carrots) that you may have

    Another option is using turkey stock, frozen vegetables and chopped turkey along with your pasta. You get the same result, but without using leftovers.
