Jalapeño Cheddar Swim Biscuits

 

Ingredients

  • 1 stick of butter

  • 1 jalapeño, seeds removed and chopped

  • 1 (8 oz) block sharp cheddar cheese, grated

  • 2 ½ cups all-purpose flour

  • 4 teaspoons baking powder

  • 4 teaspoons sugar

  • 1 teaspoon salt

  • 2 cups cold buttermilk

 

Directions

  1. Set your oven to 450°F (232°C).

  2. Place the stick of butter in a baking dish and put it in the oven to melt while you prepare the dough.

  3. In a large mixing bowl, combine the flour, baking powder, sugar, and salt. Stir to blend.

  4. Pour in the cold buttermilk, mixing until everything is well incorporated and a dough starts to form. Add Jalapeño and Cheese. Gently fold in the chopped jalapeño and shredded cheddar cheese until evenly distributed in the dough.

  5. Take the baking dish out of the oven with the melted butter. Pour the biscuit dough into the baking dish, using a spatula to spread it evenly so that it touches all sides. The dough should look like it’s “swimming” in the butter. Use a knife to score the dough into 9 equal parts.

  6. Place the baking dish back in the oven and bake for 25- 30 minutes, or until the biscuits are golden brown on top.

    Serve warm
