Green Beans, Potatoes and Tomatoes
This easy, adaptable and “use what’s on hand” recipe for Green Beans was a goto for Frank’s family growing up and he shares this on his recent lunch LIVE. Get creative nd use what your family likes or what you need to use up. You can swap out the type tomatoes to meet your preference.

Green Beans, Potatoes and Tomatoes
Ingredients:
1 Tbsp. olive oil
1/2 large onion, chopped or sliced
28 oz can of plum tomatoes crushed or 1 (8 oz.) can tomato sauce
1 lb. fresh rinsed and halved green beans
1 -2 cloves garlic, minced
1 tsp. salt
1 tsp dried italian seasoning or herbs de Provence
1/8 tsp. dried ground pepper flakes
1 Tbsp. minced parsley
2 large potatoes peeled and cubed or use small baby potatoes
Lemon juice (optional)
Grated Cheese (optional)
Make It:
Add oil to a pan or electric skillet
Saute onion in oil for 5 minutes.
Add you red pepper flakes
Add potatoes, stir to coat with oil, cover 5 min
Mix in tomatoes (or sauce), garlic, salt, and green beans.
Add dried italian seasoning or herbs de Provence
Bring to a boil, cover and cook over low -medium heat 20 to 30 minutes stirring occasionally.
Stir in 1/2 the parsley.
Taste for additional seasoning or a squeeze of lemon
Bowl, top with the rest of the parsley and a sprinkling of grated cheese
Serve with side of crusty bread and a salad or alongside a roast.
You can swap our or not use potatoes, you add other vegetables as you prefer
