Granny Sue’s Potato Salad
Ingredients:
8-10 large potatoes, peeled & chopped
5-6 hard boiled eggs, peeled & chopped
1 medium sweet onion, chopped
1/8-1/4 cup sweet pickle relish
1 can of evaporated milk
3 tbsps of butter, salted
1/4-1/2 cup mayonnaise
2-4 tsps yellow mustard, to taste
salt & black pepper to taste
Recipe:
Boil your potatoes until fork tender.
Drain your potatoes and mash them up like you would do mashed potatoes.
Add your butter and evaporated milk.
Add your salt and black pepper too. Set to the side.
Chop up your onion and hard boiled eggs.
Add your onion, sweet pickled relish, mayonnaise and mustard to the bowl and mix well.
Add your eggs last so they don’t get too mushed up in the potato salad.
Mix everything well before adding the eggs.
Once everything is mixed up well, add the eggs and fold them in.
Once done, refrigerate for a few hours or overnight and serve!
