Fruity Pebble Cookies

Red Wagon Bakery's Fruity Pebble Cookies are the perfect colorful treat to make! Handmade cookies with the pebbles in the dough and then pressed into more Fruity Pebbles, this treat is as fun to make as they are to eat!
 

Ingredients

  • 1½ cups salted butter

  • 1 cup sugar

  • 1 cup packed brown sugar

  • 2 large eggs

  • 1 tbs vanilla

  • 3¾ cup all purpose flour

  • 2 tsp baking soda

  • 1 tsp baking powder

  • 4 cups fruity pebbles (divided)

  • 1¼ cup white chocolate chips

 

Directions

  1. Preheat oven to 350 degrees

  2. In the bowl of an electric stand mixe, combine butter and both sugars.

    Mix for 5 minutes until light and fluffy on medium high.

  3. Add in the eggs and vanilla and mix until combined.

  4. In a seperate bowl, mix together flour, baking soda and baking powder. Mix until combined.

  5. Stir in 2 cups of fruity pebbles and the white chocolate chips and mix until combined.

  6. Use a cookie scoop and roll into balls.

  7. Smash down the remaining fruity pebbles and put them into a bowl.

  8. Roll each ball in the fruity pebbles.

  9. Place the coated balls onto parchment lined cookie sheet and bake at 350 for 11-13 minutes. Allow to cool, serve and enjoy!
