Ingredients
For the Bars:
½ cup room temperature butter
½ cup peanut butter
½ cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
2½ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon salt
For the Peanut Butter Frosting:
½ cup peanut butter
3 tablespoons softened butter
2 tablespoons heavy cream
1 cup powdered sugar
1 teaspoon vanilla extract
For the Topping:
1 (7 oz) jar marshmallow fluff
Crushed Nutter Butter cookies (for garnish)
Directions
Preheat your oven to 350°F. In a large mixing bowl, cream together ½ cup butter, ½ cup peanut butter, ½ cup sugar, and 1 cup brown sugar until smooth and fluffy. Add in the eggs and vanilla and mix until combined.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Press the dough evenly into a greased or parchment-lined 8x8-inch baking pan. Bake for 30 minutes or until golden brown. Let cool completely.
In a medium bowl, combine ½ cup peanut butter, 3 tablespoons softened butter, 2 tablespoons heavy cream, 1 cup powdered sugar, and 1 teaspoon vanilla. Mix until smooth and creamy. Spread the peanut butter frosting evenly over the cooled bars.
Gently spread the marshmallow fluff over the peanut butter layer. Sprinkle crushed Nutter Butter cookies over the top for garnish.
