Confetti Corn

Ingredients:

  • 1/4 cup chopped carrot

  • 1 Tbsp olive oil

  • 1 can corn

  • 1/4 cup chopped water chestnuts

  • 1/4 cup chopped sweet red pepper

Instructions:

  1. In a large heavy duty skillet, saute carrots in oil until tender.

  2. Stir in corn, water chestnuts and red pepper.

  3. Heat mixture through and serve.
