Chorizo, Veggie, Potato Chowder with Masa Dumplings
Ingredients
1 lb Chorizo (any type, de-cased)
3 Potatoes, diced
2 Carrots, sliced
2 Celery ribs, sliced
1 Onion, diced
½ Bell Pepper, diced
1 can Rotel, undrained
½ cup Corn, canned or frozen
5 Garlic cloves, minced
6-8 cups Broth or Water
1 Tbls Olive Oil
Masa Dumplings:
1 cup Masa Harina
½ cup of Shredded Cheese (optional)
½ cup Chicken Stock
¼ tsp Onion and Garlic powder
1 Tbsp Cilantro
Garnishes:
Cheese
Sour Cream
Onion
Avocado
Pico De Gallo
Directions
Heat olive oil in a large pot and brown the chorizo. Remove the chorizo and set aside.
In the same pot, add veggies and garlic and cook until softened.
Stir in the Rotel, Chilies and broth or water. Bring to a boil, then reduce heat and simmer until the potatoes are tender.
Stir in the cooked chorizo and taste for seasoning. with salt and pepper to taste.
To make the dumplings, combine all the dumpling ingredients. Drop by spoonfuls into the simmering soup. Simmer 15 mins or until toothpick comes in clean.
