Chocolate Cupcakes
Ingredients
1 cup all purpose flour
1 cup sugar
6 tbs unsweetened cocoa powder
1 tsp baking soda
½ tsp salt
1 large egg
½ cup buttermilk
½ cup vegetable oil
1 tsp vanilla extract
½ cup very hot water
Directions
In a stand mixer, mix egg, buttermilk, vegetable, vanilla until well combined.
In a seperate bowl mix your flour, sugar, cocoa powder, baking soda and salt
Slowly incorporate the dry ingredients intl the wet ingredients. When fully combined, add in the hot water.
Add paper liners to a 12 count cupcake pan. Batter will be very thin. Fill halfway, but do not overfill as these will rise quite a bit.
Bake at 300 degrees for 20 minutes or until toothpick comes out clean.
Top with your favorite frosting and enjoy.
