Chinese Chicken Cucumber Salad

This Chinese Chicken Salad is a refreshing and substitute friendly take by Maggie. Chicken, cucumber, cabbage, carrot, and cassava chips make this salad with a sesame, soy, ginger, and garlic dressing
 

Ingredients

  • Chicken chunk (1 can)

  • Cucumber (1)

  • Red Cabbage (1 cup shredded)

  • Carrot (1)

  • Green Onion (2 stalks)

  • Cilantro (bushel)

  • Cassava Chips (1 cup)

    Dressing

  • Sesame Oil (¼ cup)

  • Rice Vinegar (2 tbsp)

  • Soy Sauce (¼ cup)

  • Vegetable Oil (¼ cup)

  • Sugar Substitute (¼ cup)

  • Ginger (1in knob)

  • Garlic (2 cloves)

  • Lemon Juice (½ Lemon)

  • Salt (to taste)

 

Directions

  1. Slice cucumber to desired thickness using mandolin.

    Add all food ingredients to a large bowl or container.

  2. In a separate jar, add dressing ingredients and garlic together. Mix with immersion blender and pour over the salad. Close and shake vigorously to combine.

  3. Serve topped with optional sesame seed
