Cheesy Stuffed Potato Pancakes
Transform your leftover mashed potatoes by creating cheese filled pancakes!
Ingredients
2 cups creamy mashed potatoes (chilled if very soft)
1 cup all-purpose flour (add gradually; may need more or less)
1 egg
½ cup shredded cheddar or mozzarella cheese
Salt and pepper to taste
Oil or butter
Directions
In a mixing bowl, combine the mashed potatoes with ½ cup of flour. Mix until it starts forming a dough. Add more flour gradually, kneading gently until the dough is soft but not sticky. Season with salt, pepper.
Divide the dough into equal portions (about 8–10, depending on size). Flatten one portion in your hand to form a small disc.
Place 1–2 tablespoons of shredded cheese in the center.
Fold the edges of the dough over the cheese, sealing it completely, and shape it into a ball. Flatten the ball gently into a pancake shape, ensuring the cheese is sealed inside.
Heat a nonstick skillet or frying pan over medium heat with a thin layer of oil or butter. Place the pancakes in the skillet and cook for 3–4 minutes per side, or until golden brown
Serve with sour cream, ranch, or your favorite dipping sauce.
