Blueberry Lemon Loaf

Ashton (@Justlikegranny) shared her version of Chocolate Chip Walnut Cookies and a copycat Lemon Loaf recently . Today she bring sin one of my favorite fruits, with this Blueberry Lemon Loaf with a sweet glaze topping.

Blueberry Lemon Loaf

Ingredients:

For the loaf:

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup whole milk

  • 2 cups fresh blueberries

  • 2 tbsp grated lemon zest

For the glaze:

  • 1 cup powdered sugar

  • 2 tbsp fresh lemon juice

Instructions:

  1. Preheat the oven to 350°F (180°C) and grease a 9x5-inch loaf pan.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a large mixing bowl, cream the butter and sugar together until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mixing until just combined.

  6. Fold in the blueberries and grated lemon zest until evenly distributed.

  7. Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

  8. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

For the glaze:

  1. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.

  2. Once the loaf has cooled completely, drizzle the glaze over the top of the loaf.

  3. Let the glaze set for a few minutes before slicing and serving.

This recipe should make one loaf that serves about 10-12 people. Enjoy!
