Vegan Fried “Chicken”
Ingredients
8 oz lions mane mushrooms
3/4 cup flour
3/4 cup cold water
1 tsp salt + more to taste
6 Tbsp cornstarch
1/2 tsp baking powder
1/2 tsp each garlic powder, onion powder, paprika, white pepper, more to taste
1/4 tsp each cayenne and chili powder
2 cups frying oil
Directions
Heat frying oil to 350°F
Gently clean the mushrooms and pat dry. Use your hands to tear the mushroom apart in large, bite-sized pieces, removing any stems that are tough.
In a large bowl, toss the flour, cornstarch, baking soda, and seasonings together. Remove a few Tbsp and coat the mushrooms in the flour mixture
With the rest of the flour, combine with cold water until it is a thick batter that can coat the back of a spoon.
Toss each mushroom in the batter, then carefully add to the frying oil. Cook about 3 minutes on each side or until the outside is crispy.
Remove the mushrooms onto a plate lined with a paper towel to drain and sprinkle with salt. Serve with some mustard sauce
