Roasted Cilantro Lime Cauliflower Rice
Ingredients
1 bag rice cauliflower, thawed and patted dry, or 1/2 head cauliflower grated
1-2 Tbsp olive oil
Salt and pepper
1/2 bunch cilantro, Chopped
1 tsp taco seasoning
Zest and juice of 1/2 lime
Optional: diced and seeded 1/2 jalapeno
Directions
Preheat oven and foil lined pan to 425 F.
Toss cauliflower with oil, salt and peoper, and taco seasoning.
Remove preheated pan, lay out cauliflower, and return to oven for 12 minutes.
Allow to cool slightly and toss with lime juice, zest, and cilantro.
Serve warm or make a day in advance for a chilled cauliflower dish
