Inspiration sets the stage for Taco-stuffed Peppers
I felt so lucky today because I came home to Lilyan cooking taco meat. Just the basic taco seasoning pack type of deal.
I knew I had a bell pepper in the fridge that I needed to use up and a light went on and the bell pepper taco was born….
While the taco meat cooked, I deseeded and cut the bell pepper in two. Then I simply added the mixed and cooked taco meat, topping it with Mexican blend cheese.
I then popped it under the broiler for 4-5 mins (until my cheese was melty).
Then all that’s left is topping this simple dish. I used a pre made salsa, sour cream (mixed w taco seasoning), cojita cheese, avocado, cilantro and a squeeze of lime.
It’s simple fresh low carb and keto. At just 8 carbs per serving
