Smoke Cajun Seafood Dip

Ingredients

  • 1 lb salmon filet

  • 8 Oz lump crab meat

  • 1 lb uncooked shrimp

  • ⅓ each red, yellow and green bell pepper(diced) .

  • 1 jalapeno

  • ½ shallot(fine dice)

  • 4 cloves garlic(crushed)

  • 1 block cream cheese

  • 2 cups white cheddar

  • 1 cup yellow cheddar

  • 1 pint heavy whipping cream

  • Cajun seasoning

Directions

  1. Smoke salmon with Cajun seasoning at 250° until internal temp is around 140-145°.

  2. Smoke cream cheese with the Cajun seasoning for about 45 minutes.

  3. Chop shrimp into small pieces. In a 12 inch cast iron skillet, Sauté shrimp, shallots and garlic until fragrant. In same pan assemble crumbled salmon, lump crab and cream cheese. Also add the bell peppers and combine well.

  4. Add 2 tbsp Cajun seasoning and some heavy cream to the consistency you'd like. Smoke on the smoker at 350° for 45 minutes to 1 hr. Enjoy
