So my friend Andrea A.K.A. @GlutenFreeMommaAnn sent me a video on someone making whole large carrots like these in the oven. They did a sweet option but, I thought I’d do a savory once since I’m Type 1 Diabetic and I don’t want all the extra sugar. But, you can definitely do a sweeter carrot version if you like!
