Rice Pudding with Peach Topping
Seves: 4
Ingredients
For the Rice Pudding:
1 cup glutinous rice
4 cups milk
1 cup water
1/2 cup sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
For the Peach Topping:
1 can (15 ounces) peaches in light syrup, drained, diced, and mashed
1/2 teaspoon ground cinnamon
Pinch of salt
Pinch of nutmeg
1 tablespoon lemon juice
Directions
Rinse the glutinous rice under cold water until the water runs clear.
In a large saucepan, combine the glutinous rice, milk, water, sugar, and salt. Bring to a simmer over medium heat, stirring frequently.
Reduce the heat to low and let the mixture simmer, stirring occasionally, for about 40-50 minutes, until the rice is tender and the mixture has thickened to a creamy consistency.
Remove the saucepan from the heat and stir in the vanilla extract.
While the rice pudding is cooking, prepare the peach topping. In a small saucepan, combine the mashed peaches, cinnamon, salt, nutmeg, and lemon juice.
Cook over medium heat for about 10-15 minutes, until the mixture is warmed through and the flavors are well combined.
Serve the rice pudding warm or chilled, topped with a generous spoonful of the peach topping.
Enjoy this comforting dessert!
