Quick Chipotle Aïoli
Ingredients
½ cup olive oil mayonnaise
1 tablespoon lemon juice
1 chipotle pepper in adobo sauce, finely chopped (adjust to spice preference)
¼ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh parsley, finely chopped
Directions
In a bowl, whisk together the mayonnaise and lemon juice until smooth.
Add the chopped chipotle pepper, salt, and black pepper. Mix well.
Fold in the parsley for a fresh herby kick.
Serve immediately with these shoestring french fries or refrigerate for up to 3 days.
