Quick Chipotle Aïoli

Ingredients

  • ½ cup olive oil mayonnaise

  • 1 tablespoon lemon juice

  • 1 chipotle pepper in adobo sauce, finely chopped (adjust to spice preference)

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon fresh parsley, finely chopped

Directions

  1. In a bowl, whisk together the mayonnaise and lemon juice until smooth.

  2. Add the chopped chipotle pepper, salt, and black pepper. Mix well.

  3. Fold in the parsley for a fresh herby kick.

  4. Serve immediately with these shoestring french fries or refrigerate for up to 3 days.
