Pancake Puppies

Ingredients

  • 3 cups pancake mix

  • ⅓ cup sugar

  • 1 ½ tsp cinnamon

  • ½ tsp nutmeg

  • 2 large eggs, slightly beaten

  • ¾ cup milk

  • 2 tsp veg oil

    Glaze

  • 1 cup powdered sugar

  • 1-2 tbs milk

  • ½ tsp vanilla

  • ½ tsp maple extract

Directions

  1. Preheat oil on stove to 225 to 250 degrees. Do not allow to get over 250 degrees.

  2. Add the pancake mix (must be the kind that you only add water to, no water added), sugar, cinnamon, nutmeg, 2 large eggs lightly beaten, milk and vegetable oil in a bowl and mix until well combined.

  3. Use a 1 inch cookie scoop or a teaspoon to drop balls into the hot oil.

  4. Allow to completely brown on one side and then flip over to allow other side to brown. (These will be darker due to the nutmeg)

  5. After you pull from the oil, sprinkle with cinnamon and sugar mixture. (2 tbs sugar 2 tsp cinnamon)

  6. Once done or while cooking, make the glaze frosting by combining powdered sugar, maple extract, vanilla and milk.

    You can either drizzle the glaze over the pancake puppies or place it in a small bowl as a dipper.
