Lemon Rice
Trini's lemon rice pairs perfectly with chicken or fish, delivering a flavorful and aromatic dish with a zesty lemon kick!
Ingredients
1 cup jasmine rice
1 ¾ cups water
1 tablespoon butter
1 tablespoon olive oil or butter
1 teaspoon minced garlic
½ small onion
1 teaspoon lemon butter garlic seasoning (or substitute with ½ teaspoon garlic powder + ½ teaspoon lemon zest)
½ teaspoon chicken bouillon
Juice of ½ a lemon
Salt and freshly cracked black pepper, to taste
Directions
Heat butter and oil in a medium saucepan over medium heat. Add minced garlic and onion and sauté until fragrant, about 1-2 minutes.
Add the jasmine rice to the pan and stir for 1-2 minutes to lightly toast it. Stir in the lemon butter garlic seasoning, chicken seasoning , salt, and cracked black pepper. Mix well.
Add the water and lemon juice. Stir once, bring to a boil, then lower the heat to a simmer. Cover the pan with a tight-fitting lid and cook for 15 minutes.
Remove the pan from the heat, keeping the lid on, and let the rice rest for 5 minutes to steam. Fluff the rice with a fork and serve warm!
