Ham Mac and Cheese Soup

Ham and macaroni and cheese join together to become a comforting and cheesy soup

Ingredients

  • 2 cups leftover mac and cheese

  • 1 ½ cups ham

  • 2 tablespoons butter

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 cups chicken or vegetable broth

  • 1 cup heavy cream

  • 1 cup shredded cheddar cheese

  • ½ teaspoon paprika

  • ¼ teaspoon black pepper

  • Salt to taste

  • 1 cup corn

  • Crumbled bacon or croutons

Directions

  1. In a large pot, melt the butter over medium heat. Add diced onion and cook until softened. Add minced garlic and cook for another minute.

  2. Pour in the chicken or vegetable broth and bring to a simmer. Stir in the heavy cream, paprika, and black pepper. Add the leftover mac and cheese and ham to the pot. Stir well to break it up and incorporate it into the soup. Stir in the shredded cheddar cheese until its melted.

  3. Taste the soup and adjust the seasoning with salt and more pepper. top with crumbled bacon or croutons.
