Fruity Pebble Cookies
Ingredients
1½ cups salted butter
1 cup sugar
1 cup packed brown sugar
2 large eggs
1 tbs vanilla
3¾ cup all purpose flour
2 tsp baking soda
1 tsp baking powder
4 cups fruity pebbles (divided)
1¼ cup white chocolate chips
Directions
Preheat oven to 350 degrees
In the bowl of an electric stand mixe, combine butter and both sugars.
Mix for 5 minutes until light and fluffy on medium high.
Add in the eggs and vanilla and mix until combined.
In a seperate bowl, mix together flour, baking soda and baking powder. Mix until combined.
Stir in 2 cups of fruity pebbles and the white chocolate chips and mix until combined.
Use a cookie scoop and roll into balls.
Smash down the remaining fruity pebbles and put them into a bowl.
Roll each ball in the fruity pebbles.
Place the coated balls onto parchment lined cookie sheet and bake at 350 for 11-13 minutes. Allow to cool, serve and enjoy!
