Creamy Queso

A rich and velvety cheese dip made with white cheddar, cream cheese, and a touch of spice, finished with diced green chilies for the perfect kick. Ideal for dipping or drizzling over your favorite dishes!

Ingredients

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 1 (8 oz) block cream cheese, cubed

  • 1 cup milk (plus more if needed for consistency)

  • 2 cups shredded sharp white cheddar cheese

  • 1 (4 oz) can diced green chilies, drained

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon chili powder

  • ½ teaspoon cumin

Directions

  1. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute, stirring constantly, until lightly golden.

  2. Slowly whisk in the milk, stirring until smooth and slightly thickened. Add the cubed cream cheese and stir until melted and fully incorporated. Lower the heat to medium-low and gradually add the shredded white cheddar cheese, stirring until melted and smooth.

  3. Stir in the diced green chilies, garlic powder, onion powder, chili powder, and cumin. Adjust seasoning to taste and add more milk if needed for desired consistency.

    Keep warm and serve with tortilla chips
