Chinese Chicken Cucumber Salad
Ingredients
Chicken chunk (1 can)
Cucumber (1)
Red Cabbage (1 cup shredded)
Carrot (1)
Green Onion (2 stalks)
Cilantro (bushel)
Cassava Chips (1 cup)
Dressing
Sesame Oil (¼ cup)
Rice Vinegar (2 tbsp)
Soy Sauce (¼ cup)
Vegetable Oil (¼ cup)
Sugar Substitute (¼ cup)
Ginger (1in knob)
Garlic (2 cloves)
Lemon Juice (½ Lemon)
Salt (to taste)
Directions
Slice cucumber to desired thickness using mandolin.
Add all food ingredients to a large bowl or container.
In a separate jar, add dressing ingredients and garlic together. Mix with immersion blender and pour over the salad. Close and shake vigorously to combine.
Serve topped with optional sesame seed
