Broccolini Gomaae

Gomaae (or goma-ae) is traditionally a Japanese spinach dish, but for this dish, we’re using broccolini, which was first created in Japan. Goma translates to sesame, and -ae translates to sauce

Ingredients

  • 1 bunch broccolini

  • 3 Tbsp white sesame seeds

  • 1 Tbsp sugar

  • 1 Tbsp miso paste

  • 1 Tbsp soy sauce

  • Salt to taste

Directions

  1. Wash broccolini and trim the ends. Boil a pot of water and add plenty of salt. Add broccolini to the pot and prepare a bowl of ice water. After 2 minutes, pull the broccolini from the boiling water and add to an ice bath to cool.

  2. Remove broccolini from ice bath and squeeze as much water out as possible without ruining the shape. Pat dry and set aside.

  3. Heat a skillet to medium heat. Add the sesame seeds and allow to toast, stirring frequently, for about 90 seconds. Do not let them burn, or they will become bitter. Remove and add to a mortar and pestle. An electric processor will also work, but it's not the same, you know?

  4. Grind the sesame seeds until smooth. Add miso, sugar, and soy and grind to combine.

  5. Optional: Use a torch or a broiler to toast the broccolini until slightly charred.

  6. Combine broccolini with the sauce. Serve room temperature or chilled.
