Arroz Blanco con Elote

This side dish is simple and perfect for taco night! Basmati rice is roasted in butter and simmered with broth, corn, and cilantro

Ingredients

  • 1 cup basmati rice

  • 1¾ cups of water or chicken broth

  • ½ cup of corn niblets drained or frozen

  • 4 sprigs of cilantro

  • 1 tablespoon of butter, melted

Directions

  1. Heat skillet on medium heat and melt butter

  2. Add basmati rice and coat in the butter.

  3. Add the water or chicken broth and bring to a boil

  4. Add corn and cilantro

  5. Place on tight-fitting lid, turn heat down to low and cook for 20 minutes. Do not remove the lid

  6. Turn off the heat and allow to sit for five minutes. Fluff and serve
